Pre-heat barbeque using all burners under the roasting hood.
Remove rind from ham by running a thumb around the edge and under the rind and begin pulling it back from the widest edge. Once the rind has been pulled back, cut it off around the shank. Using a sharp knife remove any excess fat and discard.
Cut the orange rind into thin strips and place in a baking dish with water and garlic cloves. Place the ham on a roast rack and sit this over the baking dish. Cover the ham securely with foil.
Once the barbeque is hot, place the roast over the grill and turn the burner(s) directly under it off. Turn the remaining burner(s) down to low to begin indirect cooking which circulates heat around the roast. Maintain a medium temperature on the heat indicator during cooking and cook with the hood down for 2 hours.
Then remove the ham and discard the juices. Using a sharp knife score the ham deeply crossways and then diagonally to form a diamond pattern. Neatly arrange the cherries on top of the ham and secure each with a tooth pick. Combine the sugar, mustard and marmalade (…
