Joe Knoll’s Extra Spicy Chili Recipe
1 lb ground beef
2 med. Onions, diced
6 cloves garlic, diced
2 cans (14.5 oz.) diced tomatoes
1 can (4.5 oz.) diced green chile peppers
1 can (7 oz.) chipotles in adobo sauce
1 can (15 oz.) black beans, drained
1 dried ancho pepper
3 dried New Mexico Chile Peppers
~1 tbsp. Chili powder
~1 tbsp. cumin
~1 tsp. cinnamon
~1 tsp. salt
~1 tbsp. brown sugar
~1 tbsp. cider vinegar
Brown and drain beef. Add to Crock Pot.
Sweat onions and garlic in pan. Add to Pot when onions are tender.
Add tomatoes, green chiles, black beans, spices, sugar, salt, and
vinegar.
Dice chipotles, remove any stems. Add to pot with the adobo sauce.
Clean dried peppers by removing stems and seeds. Simmer in ~ 1 c.
water for 20 min. Puree in blender. Strain liquid and add to pot.
Simmer in Crockpot on low for ~3 hours.
*adding fewer dried peppers will result in less heat….
