PREPARATION
Season the chicken with salt, garlic powder, and
onion powder, omitting any that the children dislike.
If using chicken breasts, remove the tenderloin,
the small strip of meat on the rib side of the breast,
and cook separately. If the breasts are thick, pound
the thickest part between sheets of plastic wrap with
the flat side of a meat tenderizer. (This ensures that
the chicken cooks quickly; if time is not important,
you can skip these steps.) Heat a nonstick skillet
for 2 minutes over medium-high heat. Pan-fry the
chicken for 5 - 6 minutes on each side or until cooked
through. Remove from the pan and cut into thin
slices.
While the chicken is cooking, arrange the lettuce on
four dinner plates. To assemble the salads for the
grown-ups, sprinkle 1/2 cup of chow mein noodles,
the green onions, and cilantro on each of the salads.
Place the chicken on top and serve with Orange
Sesame Dressing.
To assemble the salads for the children, sprinkle the
remaining chow mein noodles and the mandarin oranges
over the salads. Place the chicken on top and
serve with Orange Ginger Dressing.
