Crock Pot Mashed Potato Recipe
5 pounds of diced potatoes ( I like the red potatoes)
8 oz cream cheese
8 oz sour cream
4-5 chicken bouillon cubes
Stick of butter
Minced garlic (2-3 tsp. or more)
Salt & pepper
?Dice potatoes and boil in large pot of water with chicken bouillon cubes and
minced garlic.
?Drain when tender but reserve several cups of garlic chicken water for blending.
?Mash potatoes using garlic chicken flavored water.
?After potatoes are mashed, blend in sour cream and cream cheese.
?Put in Crock pot and refrigerate (overnight is fine!)
?Plug in Crock pot a few hours before dinner to warm potatoes.
?Place stick of butter in center of potatoes and add salt and pepper before serving.
FYI…
?Don’t use too much water as sour cream and cream cheese will add additional
moisture.
?I also add a little milk when mashing the potatoes for added creaminess.
?French Fried onions and a little cheese on top are great toppings.
