yoghurt
Apple Salad
3 bean mix, lightly cooked fresh green beans or peas, sprinkled with toasted
sesame seeds or low oil dressing
Bean & Tomato Salad
blanched green beans, cherry or diced tomatoes, shallots, slivered almonds,
non-fat yoghurt
canned corn, grated carrot and orange juice
Green Pea Salad
blanched peas, sliced mushrooms, chopped onion and lemon juice
cooked lentils, shredded carrot, chopped capsicum and sliced
Marinated Vegetable Salad
lightly steamed or microwaved pieces of cauliflower, carrot, broccoli, eggplant
mixed with raw mushrooms, capsicum and onion or shallots. Marinate overnight

Carrot & Zucchini Salad

Carrot & Ginger Salad
grated carrot, grated zucchini, sultanas, fresh grapes, orange juice
(serves 10) 5 large carrots grated
6 tbsp desiccated coconut
8 tbsp sultanas
1 2 tbsp finely grated green ginger
150 ml orange juice
Mix all ingredients together and chill before serving. Serve as part of a salad bar or as
a filling for sandwiches and pocket breads or as a “special day offer” in a cup.
Cauliflower Salad
Coleslaw
cabbage - shredded
carrot - grated
shallots - sliced
capsicum - diced
low fat mayonnaise
combine all vegetable ingredients, then stir through the mayonnaise.
Variations: Hawaiian slaw - chopped or crushed pineapple
Jungle slaw - sultanas
Grannie slaw- green apples
Corny slaw - corn kernels
grated carrot, orange juice and sultanas
blanched cauliflower and broccoli and low -oil dressing e.g. french or coleslaw
