18 fresh scallops
Method for the black
bean dressing
1/2 red pepper, peeled and finely diced
1/2 yellow pepper, peeled and finely diced
2 scallions, finely sliced
1/2 red onion, finely chopped
2 dsp salted black bean (available from
good Asian supermarkets)
2 tsp grated ginger
2 cloves garlic, finely grated
24 dsp vegetable oil
6 dsp soy sauce
1 lemon, juice of
2 limes, juice of
Pinch of chilli flakes
1 dsp coriander
For the sesame and chilli chips
9 wonton wrappers (available in Asian supermarkets)
2 tbsp sesame seeds
1 tsp chilli flakes
1 egg beaten
Method
1. Lightly brush one side of each wonton wrapper with
beaten egg. Sprinkle each wonton wrapper with
sesame seeds and chilli flakes and press in lightly.
Cut each wonton wrapper into triangles. Deep fry
until golden. (This should take about twenty
seconds.) Serve as an accompaniment to
the scallops.
2. Place diced peppers, onion, scallions, ginger and
garlic in a bowl. Stir in salted black bean. Add oil,
soy sauce, the juice of lemon and lime and then
season with chilli and coriander. Mix it all together
